2016 Paisley Celtic Series Maeve Shiraz

This range of wine is named for Celtic mythological characters of old. Maeve is a fierce goddess associated with Sovereignty and the anointing of Celtic kings. The name Maeve means "she who intoxicates". Our 2016 Maeve Shiraz is indeed intoxicating with bright fruit, balanced oak and rich flavours.
The 2016 Maeve Shiraz comes from a select parcel of grapes in the Moppa sub region of the Barossa Valley. The red clay soil with scattered ironstone and quartz, combined with the elevated site, produces grapes of great finesse but with excellent fruit weight and definition. This wine has intense berry fruits with a floral lift and a hint of nutty oak. The palate is plush, dense and textured with an amalgam of flavours, vibrant berry fruit, dark chocolate and sweet spices like cinnamon and cloves with toasty mocha oak. The palate is balanced with velvety tannins and finishes with great length of berry fruit. A wine that will cellar for ten to fifteen years.
The Celtic Series wines are from single vineyard sites and are the pinnacle of each vintage. They will only be produced in the best years. They have the trademark elegance and finesse of all the Paisley Wines and are built for medium to long term cellaring. They offer more of everything, with intense concentration of fruit, richness with depth and texture, fine tannins and seamless oak.
These single vineyard wines have had the Rolls Royce treatment in vineyard and in the winery. Only the best fruit from select sections of the vineyard is used. The vines have good age and are low yielding, thus producing wine of character and great intensity. The wines are all small batch fermented with wild yeast and hand plunged a few times a day. We utilise varying degrees of whole bunch, pre and post maceration and extended time on lees in barrel, to optimise complexity and quality. The Shiraz has been matured in 50% new French and American oak . They have spent 20 months maturing in barrel before being bottled without fining or filtration.
