2018 Seville Estate Reserve Cabernet Sauvignon

Chief winemaker Dylan McMahon's estate-grown Reserve Cabernet is a love letter to his grandfather's original plot of vines planted in 1972.

After hand-picking, the grapes are fully de-stemmed and fermented with native yeasts in stainless steel vats. Pressed off skins and run into French oak barrels (20% new), the wine is aged for 12 months to add spice, texture, and a silky tannin structure.

Bottled unfiltered and unfined, delicious to drink now but well worth careful cellaring.
