Wine Profile
Vineyard Notes
2020 was a year punctuated by both the hardship and generosity that nature can provide.
While bushfires ravaged parts of Australia – including many viticultural regions - we were
extremely fortunate not to be directly affected and even avoided the impact of lingering
smoke which can occasionally impart an unpleasant taint in finished wines. On the bright
side the season’s naturally low yields and ideal late ripening conditions have resulted in some
examplary wines which will undoubtedly stand the test of time.
Winemaker Notes
The grapes were transferred straight to an airbag press and gently squeezed to limit
colour extraction from the grape skins. The settled juice was rough racked to a refrigerated tank and the ferment commenced by inoculation with a yeast chosen for its ability
to enhance aromatics. A portion of the juice (40%) was also transferred to recently used
barriques for two months of fermentation to increase the texture and mouth-feel of the
wine. Soon after ferment had finished the wine was lightly sulfured to prevent malolactic
and aged for 6 months on gross less before being filtered and bottled in November.
Food Pairing Notes
