NV Forget-Brimont Grand Cru Blanc de Blanc

Sight : Pale yellow colour with light green tints. Fine persistent bubbles. Smell : Delicate aromas of white flowers (acacia, hawthorn) and white peach. Taste : Initial impression is lively, fresh and powerful. The aromas reveal notes of white peaches and citrus. Lovely round mouth.
Forget-Brimont adopted a sustainable viticulture and minimal-intervention method 20 years ago. A noninterventionist winemaking approach has been adopted to allow full expression of the terroirs and varieties. Only the first press (la cuvée) is used and only the best of that pressing is kept, adhering to the commitment to quality and purity.
Blending with a high proportion (40% to 50%) of reserve wines of almost 10 different years in each cuvée, except Vintages, adds depth and complexity. The Champagnes then undergo a lengthy secondary fermentation 15m underground in traditional chalk cellars for between 30 months & 10 years. The wines don’t contain additives, aren’t fined and are matured on lees in thermoregulated tanks before bottling. After dosage they receive an additional 2 to 6 months bottle age before release.
